Pasta salads belong in America's Hall of Fame. Think about it. Dare you not attend a cookout or summer picnic without some form of pasta salad taking center place on the table. Between Aunt Becky Mae, Cousin Clarice, Mama Sue Ellen or Granny Pearl, there will be at least one bowl of this favorite side dish showing up, if not two. America has had a taste for pasta salad ever since it starting showing up on cookbook pages in the early part of the 1900's. Every region as well as every family has a favorite spin on their kind preferred whether made with a vinaigrette bath or a good soaking in a creamy mayo based dressing. These just came out of the oven, and the verdict is…………..delicious! I didn’t have sunflower seed butter, so I used peanut butter. Next time I’ll get the sunflower seed butter. Anyway, these muffins are super moist and yummy. These are really the only paelo muffins I’ve tried that don’t taste like an egg muffin. Bake these, you won’t be sorry! Roast Pork with Maple and Mustard Glaze

Tried this for a Sunday dinner and it was a HIT! - much better than the normal dried up pork roast. Sweet and savory. Roast Pork with Maple and Mustard Glaze For 8 Servings Ingredients: 2 1/2 pounds boneless pork loin roast Pork Loin Roast 1 cup real maple syrup 4 tablespoons prepared Dijon-style mustard 2 1/2 tablespoons cider vinegar 2 1/2 tablespoons soy sauce salt to taste ground black pepper to taste Directions: Preheat the oven to 350 degrees F (175 degrees C). Stir together the maple syrup, mustard, vinegar, soy sauce, salt, and pepper in a small bowl. Place pork roast in a shallow roasting pan. Spread glaze evenly over pork roast. Roast pork in the preheated oven uncovered, until internal temperature measured with a meat thermometer reaches 145 degrees F (63 degrees C), about 1 hour. Remove from oven, and let rest about 10 minutes before slicing to serve. Tip: Aluminum foil can be used to keep food moist, cook it evenly, and make clean-up easier.
